Nicecream cake with clean salted-caramel sauce

This healthy nicecream cake is a deliciously healthy dessert recipe, featuring a biscuit-like base and a salted caramel drizzle.
Are you a recovering dieter? I only ask because you’re on a healthy food and wellness blog, so you’re clearly someone who’s interested in respecting their body – good for you!
 
When I chat to my readers and Shape University members, I find we all have a similar yet individual story. It usually begins with body loathing and poor body image, then moves to a period of strict dieting and disordered eating. Luckily for most of us, the story ends with a realisation that you can’t trick your body into sustainably losing weight – and a journey to a holistically healthy lifestyle ensues. 
 
I’ve written extensively about the diets I’ve tried in the past. But even now, after blogging for two years and studying nutrition for one, I get tempted to try the latest fad. I’ll be the first to admit the promises of effortless weight loss and a tighter booty catch my attention. 
 
But we just have to keep reminding ourselves they’re not real! 
 
That’s why I’ve been telling Shape University about my new favourite eating style: “the majority approach.” As the name implies, it involves making the healthy choice most of the time. Groundbreaking, I know.
 
The reason the majority approach is so beneficial is because it’s so sustainable. It’s definitely better for your health to eat healthy most of the time than to spend three months drinking green smoothies, eating a slice of pizza and “falling off the wagon,” before reverting straight back to your old habits. 
 
The best part about the majority approach is there’s cake! Desserts with benefits like this nicecream cake with clean salted-caramel sauce are the perfect mix of healthy and delicious ingredients that create a sustainable, healthy way of eating. 
 
Vegan salted caramel nicecream cake
Serves 8
This healthy nicecream cake is a deliciously healthy dessert recipe, featuring a biscuit-like base and a salted caramel drizzle.

Base
  1. Spray oil
  2. 1 cup dried dates, pitted
  3. 1/3 cup water
  4. 1 cup walnuts (or cashews)
Ice cream filling
  1. 2 medium bananas, frozen
  2. 1 cup cashews
  3. 1/3 cup water
  4. 3 Tbsp cocoa powder
  5. 1 Tbsp maple syrup (or honey if not vegan)
Salted caramel sauce
  1. 2 Tbsp tahini
  2. 2 Tbsp vanilla almond milk
  3. 1 Tbsp maple syrup
  4. Ground rock salt to taste
Base
  1. Place dates in a small bowl/microwave safe container and cover with water.
  2. Microwave for one minute, or until dates are soft and plump.*
  3. Meanwhile, line a cheesecake tin with baking paper.
  4. Allow dates and liquid to cool slightly before placing in a food processor.
  5. Blend with walnuts until a smooth, thick consistency forms.
  6. Place mixture in lined round tin and press out with a fork into an even base. Place in the freezer.
Ice cream filling
  1. Place cashews in a small bowl/microwave safe container and cover with water.
  2. Microwave for one minute, or until they begin to soften.*
  3. Meanwhile, tear banana into small pieces and place in food processor.
  4. Top with cocoa powder, honey, cooled cashews and liquid.
  5. Process until thick, creamy consistency forms.
  6. Remove base from the freezer and evenly layer mixture on top. Return to the freezer for two hours.
Salted caramel sauce
  1. Before serving, mix sauce ingredients together with a spoon until combined and drizzle on top.
Notes
  1. *For a raw dessert, soak the dates and cashews separately for a few hours before preparing instead of microwaving. The heat just speeds up the softening process.
